Exactly its always a case of guys who are filled with rage and agression (because its a real fight not a contest) and they just fly at each other and unleash it all. Also the natural instinct is just to use your fists, karate kicks are not a natural instict. Typicly the only time you'll see some kick in a real fight is if their oppenent has gone down and they want to really finish them off.

The only punches we were shown were these weird ones where you stand with your shoulders straight and you throw the punch from you chest with palms facing up (fists closed though obviously) and you twist your fist round as you extend the arm. You keep your body almost totally straight and dont throw any of your body weith behind it. I remember thinking these would'nt hurt anyone.

Imagine throwing that puch in a fight while your opponent just throws a haymaker and takes your head off.
That was just the punch that they taught, in taekwondo its mostly kicks. You cant start teaching your own style its been taught that way for centuries.
