Oh and even if we take your ridiculous example, the "low IQ Stacey" still needs a type of guy who mentally stimulates her, that's not to say that their conversations would be mentally stimulating for most people, for actual conversation about interesting subjects or abstract thoughts would be deemed "boring" by these people.
I know because I've been there, and I can engage in how these types of girls like to have conversation (with some practice), they enjoy the simple things, don't understand unusual humour or subtle sarcasm for example. f*** I mean right now I'm really remembering one girl in particular, and the simple jokes she made, and stupidly 2 dimensional way she talked and even went about her life, I mean it's not her fault, but I'd go insane if I ended up with someone like that. But anyway she wasn't truly that into me, I'm not a genius or anything but my interests didn't match her interests whatsoever, for her Game of Thrones is like a subculture, it's this geeky little show she likes, when to most people that's the most mainstream crowd pleasing thing going (it is). And take that for example, she didn't understand or catch the actual interesting parts of that show, the character development, nuances in the storyline that represented something bigger than the show, she just understands "oooh so this guy killed that guy because he tried to kill that other guy ohhh".
So with work I can relate to the type of girl you're referring to, but over all I'm not truly "one of them" and she knew that, she wasn't crazy about me, possibly she just initially liked how I looked but on an emotional level (if you can consider these types of people having an "emotional level") I wasn't her type. She didn't really care when I talked about taking some time away from each other, and only texted once, she didn't care, she's suited to a guy who's thoughts don't run off into further tangents, just discusses things in a literal sense and that's all you confine yourself to.
